This simple summer salad recipe is from Zoe's e-Book at My Healthy Kitchen. Full of fresh and beautifully coloured vegetables, this salad will keep you cool in those warm summer nights.
1. Use a julienne peeler to peel carrots and cucumber into thin strands. If you don't own a julienne peeler, simple use a regular peeler to peel of
long ribbons, then use a knife to slice into thin strands. Thinly slice cabbage into 1 cm pieces.
2. In a large bowl, mix vegetables with with coriander leaves, chilli the juice from lime.
3. Fold in shredded poached chicken.
