Healthy Breakfast Casserole Recipe

Something a little different for Breakfast. This is the perfect winter warmer, thanks to The Merrymaker Sisters

  1. 300g free range mince (your favourite!)
  2. 10 button mushrooms sliced
  3. 1 carrot grated
  4. 1/2 brown onion finely chopped
  5. 4 eggs
  6. Coconut oil for the pan 
  7. Salt and pepper



  1. In a medium heat fry pan add the oil and saute the onion until soft.
  2. Add the mince and cook until just brown.
  3. Add the carrot and mushrooms and continue to cook for a further 5 minutes.
  4. Turn the heat down to low and crack 4 eggs in to the mince and allow to cook for around 5 minutes (or to your liking!).
  5. Serve hot with avocado, salt and pepper!
