Did wheat or cows milk come up on your list of no-no's? Fret not! There's still cake!
1 cup water
3 tbsp chia seeds
3/4 cup rapadura or panela
A dash of pure vanilla essence (preferably. homemade)
A pinch of salt
100ml good quality oil
1 cup almond meal
2 teaspoons of baking soda
1/2 cup cacao powder
Plus your favourite ingredients.
Wayne has made two different cakes in this picture. The first cake has 2 mashed up bananas and 1 cup of sultanas, and the other cake has 2 cups of raspberries and 1 cup flaked coconut. Both were AMAZING!
1. Mix water and chia seeds together and set aside.
2. Mix all remaining ingredients together, then add chia gel and mix again
Cook at 190 degrees (Celsius) for 45 minutes
